Abstract

Chilli (Capsicum annum L.) is one of the most valuable and commercial spice of crops of India. It is virtually indispensable item in the kitchen. The green chilli fruits are used in salad as well as in curries. Chilli contains a crystalline colourless alkaloid known as capsaicin which imparts pungency to the fruits.
