Abstract

A protocol for preparation of whole tomato concentrate was standardized in cvs. Vaibhav Ananya and Allround. Hundred kg fruit gave 32 kg concentrate in open pan. The concentrate had 20 mg/100g acrobic acid content in Vaibhav while lycopene (6.43 mg/100 g) was estimated in Allround. There was slight decrease in acidity after 3 month storage.
